TO MAKE A BOUQUET GARNI
A bouquet garni
is used by many chefs to infuse flavorful herbs into sauces.
The variety of bouquet garni recipes are endless.
Create your own bouquet garni to flavor soups, stocks, poaching liquids, stews, and braised dishes.
Always removed a bouquet garni after cooking.
You can purchase traditional bouquets or make your own
bouquets. Idyllically at least three fresh herbs are
used to create a bouquet. Nowadays the door is wide
open to add dried herbs and spices when creating your
own homemade bouquet garni.
The most commonly used bouquet garni is fresh stalks of parsley,
sprigs of thyme, one bay leaf tied together with white
cotton string.
If you do not have access to fresh herbs, you can mix dried herbs.
Place your dried herbs and spices in a square of cheesecloth
and tie all corners together creating a closed bag.

Use: Flavor soups, stocks, poaching liquids, stews, and braised
dishes
1/4 cup Bay leaves
1/2 cup Dried thyme
1/2 cup Parsley
1/2 cup Rosemary
1/2 cup Sage
Crush herbs. Use 1 tablespoon of mix to make cheesecloth
bouquet garni bundles.
Store bouquet garni bundles in an airtight container.

Use: Hearty Stews and Veggie Soups
10 whole black peppercorns
1 tablespoon dried rosemary
1 tablespoon dried thyme

1 cinnamon stick
1 tablespoon cracked cardamom seeds
2 whole cloves of anise
1 large slice of fresh ginger
3 gloves of garlic
