Jackie’s Best Cheesecake 
2 ½ Lbs Cream Cheese (5- 8oz. Pkgs)
1 ½ C Sugar
3 Tbls Flour
1 Tbls Lemon Juice
1 Tsp Vanilla
5 Eggs
2 Egg Yolks
½ C Half and Half
1 Prepared Graham-Cracker Crust in a Large Spring Form Pan

Standard Graham-Cracker Crust:
To prepare standard graham cracker crust uses the following ratio of ingredients. This cheesecake requires a double batch of the following ingredients.
1 Cup graham–cracker crumbs,
1 Tbls Sugar,
6 Tbls Melted Butter
I like my crust thicker so I triple the recipe. When pressing the crust in the spring form pan, press the graham crust so that it forms part way up the sides of the spring form pan.
Soften the cream cheese to room temperature while making the graham-cracker crust. Preheat oven to 475 F
Blend cream cheese, sugar, flour, lemon juice and vanilla in a large mixing bowl. Add in the 5 eggs one at a time while blending, then add 2 egg yolks and beat. Fold in the Half and Half and then pour mixture into prepared spring form pan. Bake 12 minutes at 475 F, reduce heat to 250 F, and bake one hour or until center is set. Remove from oven, cool to room temperature, and then refrigerate.
