Potato
Biscuits
1 cup mashed potatoes
2 cups flour
1 cup buttermilk
2 tsp. baking powder
1 tbsp. butter
1 tbsp. Honey
1/2 tsp. baking soda
1 tbsp. brown sugar
Mix ingredients and roll out on wax paper. Cut
biscuits and bake at 400 F until golden brown.
MEAT LOAF
2 lbs. ground round steak
2 eggs
1 1/2 cups fresh bread cubes
1 med. onion chopped
1/4 cup BQ sauce
1 tsp. salt
1 tsp. Italian seasoning
1/4 cup BQ sauce for topping towards end.
Mix thoroughly. Put into loaf pan. Bake one hour at
350 F.
15 minutes before taking from oven, top with 1/4 cup
BQ sauce. Serves six.
PAM'S PEACH COBBLER
6 cups peeled and sliced
fresh peaches
1/2 cup brown sugar, firmly packed
1 Tbls. cornstarch
1 Tbls lemon juice
1/2 tsp cinnamon
1/2 cup All-purpose flour
1/3 cup enriched corn meal
1 Tbls granulated sugar
1 tsp baking powder
1/4 tsp salt (optional)
2 Tbls margarine
1/4 cup milk
1 egg slightly beaten
In 3-qt. saucepan, combine peaches, brown sugar,
cornstarch, lemon juice and cinnamon. Bring to a boil,
stirring constantly. Boil and stir 1 minute. Pour
mixture into 1-1/2-qt. casserole.
Heat oven to 350 F. Combine dry ingredients. Cut in
margarine until mixture resembles coarse crumbs. Add
milk and egg, mixing just until dry ingredients are
moistened. Drop by 1/4 cupfuls over hot filling.
Bake 30 to 35 minutes or until topping is light golden
brown. Serve warm.
