PAT'S CORN CHOWDER

4 slices bacon, chopped
1/2 cup chopped onion
1/4 cup chopped celery
2 large potatoes, peeled and diced
1 Tbsp corn starch
2 cups chicken stock
2 cups milk
2 cups cream-style corn
Salt and pepper to taste
In large, heavy saucepan, cook bacon until crisp. Add onion, celery, and potato cook until soft but not browned. Stir the corn starch into the chicken stock. Add to veggies and simmer 10 minutes or until potatoes are tender. Add milk and corn. Simmer about 10 minutes, adding salt and pepper to taste. Be careful... Do not boil, you just want to heat all the ingredients and serve. Makes 6-8 servings.

Fast and Easy Casserole
It’s quick, easy, and delicious. One can of your favorite soup diluted with one can of water.  Layer sliced potatoes, carrots, onions, and your favorite meat in a casserole dish. Pour part of soup mix over layer and continue to layer and add soup mix to top of dish. Bake at 350 till done. Veggies can be changed to suit your taste.
